Thinking you can’t enjoy those delicious creamy dishes if you can’t have dairy? Wrong! This is the recipe for my version of a rich Seafood Chowder. (also gluten free)

2 small potatoes
1 tablespoon of olive oil spread/fat of choice
1 teaspoon of crushed garlic
1 tbsp of maize flour (any white flour)
3/4 cup of milk (I use Almond Breeze- Unsweetened almond milk)
1 cup of stock
Another 1/4 cup of milk (I use Almond Breeze- Unsweetened almond milk)
100gms of white fish
150grms of seafood marinara mix (mussels, calamari, prawns, salmonn)
1 cup of frozen peas and corn
1/2 tsp of pepper
2 tabsp of fresh parsley chopped
*tablespoon of arrowroot with a tablespoon of water if needed to thicken
1. Peel and quarter the potatoes. Boil for 5 minutes until slightly soft but not completely cooked. Drain and chop into large cubes.
2. Melt marg in a pot and add the flour and garlic. Gradually add the almond milk. Simmer for 2 minutes then add the rest of the milk and stock.
3. Bring to boil and then add the seafood, fish and pepper and then reduce to a simmer. Simmer for 5 minutes or until cooked.
4. Add peas, corn and parsley and if soup is not thick enough, also add the arrowroot mix.
Simmer for another 2 minutes.
5.Curl up with a huge bowl of this on the couch.
Still very hearty and as delicious as a ‘normal’ Chowder. Hope you enjoy it!
Almond milk has changed my life!
I used to get really boated and queasy when I drank cows milk, after switching to Almond milk I’ve never looked back!
One of my favourite things which doesn’t exactly fit into my healthy diet is my love for cookies with a cup of tea for an evening snack. Its quite hard to get out of this routine, so instead of taking away something I loved, I just play the substitution game! My two favourite cookie recipes, which of course use amazing almond milk are:
Protein Gingerbread Cookies
Ingredients
5 cups whole wheat flour (or I sometimes use almond meal)
1 cup vanilla protein powder
1 Tbsp. baking powder
1 Tbsp. ground ginger
1 tsp. ground nutmeg
1 tsp. ground cloves
1 tsp. ground cinnamon
1 cup butter substitute (I use coconut/almond oil)
1 cup light molasses
1/4 cup water
1/4 cup of Almond Milk
2 egg whites
1 tsp. vanilla extract
Directions
1. In one medium bowl, Mix together the flour, baking powder, ginger, nutmeg, cloves, and cinnamon. Set aside.
2. In another medium bowl, mix together the butter substitute, molasses, almond milk, water, egg whites, and vanilla until smooth.
3. Pour in the dry ingredients and mix thoroughly.
4. Roll dough into a flat ball. Cover in plastic wrap and refrigerate for 2-3 hours.
5. Preheat oven to 175 degrees C.
6. On a lightly floured baking pan, roll the dough out to 1/4 inch thickness.
7. Cut into desired shapes with cookie cutters
8. Bake for 8-10 minutes in the preheated oven.
Peanut Butter Choc Chip Protein Cookies
Ingredients
1cup Almond Flour
1/4 cup Natural Peanut Butter
1 tsp Baking Powder
1 tsp Stevia
2 Tbsp Almond Milk
1/4 c. dark chocolate chips (optional)
1 tsp honey
1tsp olive/coconut oil
Directions:
1. Preheat oven at 180*C
2. Combine Flour and PB and mash together until PB is mixed in well.
3.Add in all other ingredients (except oil) and mix well.
4. Oil baking sheet with oil, spread using paper towel.
5. Make 12 golf ball size cookies with batter, then press them down on sheet for a round cookie shape.
6 Bake @ 180*C for 10minutes, let cool for 5. Enjoy!

A chocolate banana and tofu smoothie.
One of my favourite culinary sensations – sinking a fork into a thick cheesecake and letting the creaminess melt onto my tongue! Living a healthy lifestyle or living with intolerances doesn’t mean I need to miss out on this deliciousness. I make a delicious almond cheesecake with an almond meal crust and a Almond Breeze almond milk, coconut oil & macadamia nut filling. Yum, yum, yum!
This may sound complicated but it’s not: Leave the almond milk with your Mum. In my experience something healthy and tasty will magically appear.

I loovveee eating Tuna Mornay but always feel a bit guilty afterwards as some of the ingredients I put into it can be a tad fattening. I think I should start making it with almond milk so I can enjoy it guilt free!

I love almond milk! Such a tasty and healthy alternative to animal milk.
My favourite way to hae it is in a green smoothie – banana, spinach, chia seeds, cinnamon and almond milk. YUM!v
Nothing beats this smoothie for a perfect start to the day:
